Neil's Yard Dariy, London

While France may stick out in the mind of many as being the county of cheese, there are many other and just as wonderful selections to be found in neighboring countries. As wonderful as the Italian offerings are and as mystic the cheeses of Spain tend to be, It is the UK that truly equals that of France. And no better place to find these rich and dynamic flavors than at Neil's Yard Diary in London, England.

A temperature controlled building that is part store front and part ripening room, the facility is pristine for obtaining the glorious cheeses from around the United Kingdom.

Focusing mainly on the English creations, a good number of Scottish and Irish cheeses can also be found.

With the low amount of law on pasteurization, many young and rare delicacies to be available for legal consumption.

If there is one style that England does very well, it is the Cheddar. For those that regard Wisconsin as making the best Cheddar, in all honesty, England's cheeses are far superior. Neil's Yard carries cheeses that are specified as authentic Cheddar, (being made in the city of Cheddar). There are also a great deal of 'Cheddar style' cheeses that might not have the specific origin but all the same amount of greatness in flavors.

Some are chalky on the palate while others having a pleasing smoothness. Some of the larger raw milk versions have a large amount of grass to their scent where simple scents of warmed milk can be found. Salty, gamey, crunchy, dynamic, there are so many ways to describe the variations of these amazing cheeses.

Visiting during the growing season of spring, when the milk of goats is at its peak, it becomes hard limit to just a few selections. The younger cheeses really benefit from the herbaceous inclinations of flavor brought on by the abundance of grass and fresh plants.

The cow's milk are great and some young sheep milk can be found, but it is the goat's that really come into seasonal fashion.

There can't be a cheese shop without bacteria veined blue cheeses. Big and bold flavors with textures ranging from creamy to crumbly, there isn't a loss of variety within Neil's Yard.

Going to Neil's Yard is to some like walking into a candy store. With all the amazing selections to choose, it can be a bit overwhelming, but with a crew of passionate and knowledge cheese connoisseurs cutting tastes and giving stories, one's needs will always be met. The range of flavors within just a few small tastes is large enough to deeply satisfy. A destination in itself, Neil's Yard Dairy represents the Untied Kingdom with pride.
